Caramelised Breakfast Muesli

This musli is nice to serve on top of different breakfast items. You can put it on vegan soy-yogurt, pancakes, oatmeal or smoothie bowls. This recipe has lots of fiber and it’s of course vegan.

Muesli with other breakfast grains

Muesli can be a very healthy element in a breakfast. You can add so much nutrition to a homemade muesli. Oats are a whole grain food, with lots of fiber. Nuts and seeds goes well in a muesli. They have good fatty acids and omega-3. This kind of muesli has a high protein value, and in the same time good carbohydrates.

This recipe is made so you get a big batch. Store it in a nice glass jar on a shelf in the shade. This recipe is made in collaboration with vegan chef Neel Engholm.

Ingredients

8 dl Oats
(You can also find glutenfree oats)

2 dl Raisins
(You can add other dried fruit instead like goji berries or dried mango)

3 dl Sugar

2dl Chia
(You can add other seeds or nuts instead like flax seeds)

2 tsp vanilla
(You can add other flavours instead like cinnamon)

Instructions

Put all sugar on a frying pan

Melt sugar on low heat

When melted add the rest og the ingredients

Let it caramelize together. Slowly mix ingredients with melted sugar.

Make sure its mixed well.

Spread out in a thin layer to cool down. Break into pieces of you preference.
